This lot is a Yemenia variety and it’s part of Qima Nanolots and Farmer series. It’s grown in Al Mahjar, a village of Hayma Kharijiya, region of Sana’a governorate in west Yemen. This region is known for its mild weather, fresh air and a chain of mountains. This lot is grown at 2300mt of altitude.
After hand picking, Qima’s processing team collects coffee cherries from the farm gates and transports them to exclusive in-house facilities for drying and milling to prevent moulding and unintended fermentation. Once arrived to the facilities, the cherries are placed on traditional raised African beds, where they are left to dry between 15-25 days. Environment conditions - like humidity, BRIX levels, drying time and periodic turning - are closely monitored to ensure uniformity and quality.
