This lot is a Yemenia variety and it’s part of Qima Nanolots and Farmer series. It’s grown in Haraaz, a mountainous region where factors like soil fertility, microclimate and rainfall makes this place home to some of Yemen’s best coffee-growing communities. Even stratospheric altitudes contributes to make high quality coffee growing. Manakha lot is grown at 1800mt of altitude.
After hand picking, Qima’s processing team collects coffee cherries from the farm gates and transports them to exclusive in-house facilities for drying and milling to prevent moulding and unintended fermentation. Once arrived to the facilities, the cherries are placed on traditional raised African beds, where they are left to dry between 15-25 days. Environment conditions - like humidity, BRIX levels, drying time and periodic turning - are closely monitored to ensure uniformity and quality.
