The selection of green coffees to roast for Gourmet coffee begins with choosing the best farms around the world. For our coffees, we choose only high-altitude plantations with hand-picked fruits. Even now, after many years, when we search for new blends, we are overwhelmed with excitement.
Over the years, our research has led us to choose ARABICA varieties such as Brazil Monte Carmelo, Brazil Cerrado, Brazil San Rafael, Antigua Pastores in Guatemala, Colombia Supremo, Colombia Huila, Ethiopia Sidamo, and India Plantation Kenya, Honduras Marcala, Peru Amazonas, Mexico Chiapas, Nicaragua Jinotega.
For ROBUSTA coffee, we favor varieties like India Kaapi Royale and Indian Cherry, Vietnam wet polished, Cameroon, Uganda, Congo, and Indonesia Java.
Once the green coffee samples are received, organoleptic (chemical, physical, structural, and sensory) analyses are carried out to ensure that our quality standards are met.
The coffee is also visually inspected for defects, the size of the beans is checked, and moisture analysis is performed, which is crucial for understanding heat conductixon during roasting.
The water content within the bean also tells us how fresh the coffee is (from 8% for a coffee that wants to be special to no more than 12% to prevent the development of dangerous molds inside).
Once the chosen sample is roasted, we proceed with the tasting using the Brazilian cupping method, which is used to evaluate the quality and defects of the coffee, and tasting as espresso.
Only a slow and gentle roasting, air cooling, and careful blending—fruits of years of experience—result in a cup with the right balance of aroma, body, and sweetness.
The roasting we favor is a medium roast, full city, very dark and bodied with a well-defined aroma, but to satisfy our clientele and create custom blends, we also perform other types of roasting.
For each coffee or blend, we identify the right roasting curve by managing time and temperature.
Additionally, as another control parameter, we check the color of the roasted coffee with a colorimeter.
